Applications of computer vision systems for meat safety assurance in abattoirs: A systematic review

Introduction in 2017–2019 of the new EU legislation on official controls food production allowed use computer vision systems (CVSs) as complementary tools meat inspection bovines, pigs and poultry. A systematic literature review was performed to identify analyse relevant articles reporting performances CVSs used abattoirs for ante- post-mortem veterinary safety assurance, including detecting carcass/organ contamination lesions. In this review, 62 were identified analysed. There 35 CVS performance detection lesions 27 carcass contamination. broiler chicken, pig bovine assurance reported 53, 5 4 articles, respectively. Not all developed validated, only three results from real-time evaluation an abattoir vs veterinarian.
